  • 1 tablespoon lemon juice (optional, for a hint of tang)

Instructions

Step 1: Prepare the Peach Filling

To make your peach filling, start by washing, peeling, and dicing your peaches into small cubes. You can also blend them slightly if you prefer a smoother filling.

  • In a small bowl, toss the diced peaches with sugar and a splash of lemon juice. Let them sit for 10 minutes to release their natural juices and become slightly syrupy. If you’d prefer a firmer filling, you can skip the sugar and lemon juice.

  • After 10 minutes, drain the excess liquid, leaving the peaches to form a juicy but thick filling. Set this aside as it will be wrapped inside the mochi.

Step 2: Prepare the Mochi Dough

  • In a mixing bowl, combine the mochiko (glutinous rice flour), sugar, and water. Stir well to combine.

  • Transfer this mixture into a microwave-safe bowl or a steamer. If using a microwave, cover the bowl with plastic wrap and microwave for 1 minute. Stir the mixture and then microwave again in 30-second intervals, stirring in between until the dough becomes thick, translucent, and sticky.

  • If using a steamer, cover the bowl with a damp cloth and steam the dough over medium heat for about 20 minutes, stirring occasionally until it becomes sticky and firm.

Step 3: Shape the Mochi

  • Once your mochi dough is ready, allow it to cool slightly for 5-10 minutes. It should be cool enough to handle but still warm and sticky.

  • Lightly dust a clean surface with cornstarch or potato starch. Transfer the mochi dough onto the dusted surface.

  • Divide the dough into small portions (about 1-2 tablespoons per piece). Roll each portion into a ball and flatten it into a round disc with your fingers or a rolling pin.

Step 4: Add the Peach Filling

  • Place a spoonful of the peach filling in the center of each flattened mochi disc. Gently fold the edges of the mochi over the peach filling to seal it inside.

  • Pinch the dough together at the top to form a sealed pouch. Ensure that the peach filling is fully enclosed within the mochi.

Step 5: Dust and Serve

  • Once all your Peach Mochi pieces are sealed, dust each one lightly with cornstarch to prevent sticking. Arrange them on a tray or plate.
