Ingredients
For the Steak:
-
1 ribeye, sirloin, or filet mignon steak (8–12 oz)
-
1 tbsp olive oil or butter
-
1 tsp salt
-
1/2 tsp black pepper
-
1/2 tsp garlic powder
-
1/2 tsp onion powder
-
1/2 tsp paprika (optional)
-
1 sprig fresh rosemary or thyme (optional)
-
2 cloves garlic, smashed (optional)
For the Eggs:
-
2 large eggs
-
1 tbsp butter or oil
-
Salt and pepper to taste
-
Fresh parsley or chives for garnish (optional)
Instructions
Step 1: Prepare the Steak
-
Remove the steak from the refrigerator at least 30 minutes before cooking to bring it to room temperature.
-
Pat the steak dry with a paper towel and rub with olive oil.
-
Season both sides generously with salt, black pepper, garlic powder, onion powder, and paprika.
Step 2: Cook the Steak
-
Heat a cast-iron skillet over medium-high heat until very hot.
-
Add butter and place the steak in the pan.
-
Sear for 3-4 minutes per side for medium-rare or adjust time based on desired doneness.
-
If using, add rosemary and smashed garlic in the last minute and baste the steak with melted butter.
-
Use a meat thermometer to check doneness:
-
Rare: 125°F
-
Medium-rare: 130-135°F
-
Medium: 140-145°F
-
Well-done: 160°F
-
-
Remove the steak from the pan and let it rest on a plate, covered loosely with foil, for 5-10 minutes.
Step 3: Cook the Eggs
-
In a small frying pan, melt butter over medium heat.
-
Crack the eggs into the pan, keeping yolks intact for sunny-side-up eggs.
-
Cook for 2-3 minutes until whites are set but yolks are runny. For over-easy eggs, flip them and cook for another 30 seconds.
-
Season with salt and pepper.
Step 4: Slice and Serve
-
Slice the rested steak against the grain for tenderness.
-
Plate the steak alongside the eggs.
-
Garnish with fresh herbs if desired.
Step 5: Enjoy!
-
Serve immediately with toast, avocado, or roasted potatoes.
