Perfect Steak and Eggs Breakfast

Ingredients

For the Steak:

  • 1 ribeye, sirloin, or filet mignon steak (812 oz)

  • 1 tbsp olive oil or butter

  • 1 tsp salt

  • 1/2 tsp black pepper

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • 1/2 tsp paprika (optional)

  • 1 sprig fresh rosemary or thyme (optional)

  • 2 cloves garlic, smashed (optional)

For the Eggs:

  • 2 large eggs

  • 1 tbsp butter or oil

  • Salt and pepper to taste

  • Fresh parsley or chives for garnish (optional)


Instructions

Step 1: Prepare the Steak

  • Remove the steak from the refrigerator at least 30 minutes before cooking to bring it to room temperature.

  • Pat the steak dry with a paper towel and rub with olive oil.

  • Season both sides generously with salt, black pepper, garlic powder, onion powder, and paprika.

Step 2: Cook the Steak

  • Heat a cast-iron skillet over medium-high heat until very hot.

  • Add butter and place the steak in the pan.

  • Sear for 3-4 minutes per side for medium-rare or adjust time based on desired doneness.

  • If using, add rosemary and smashed garlic in the last minute and baste the steak with melted butter.

  • Use a meat thermometer to check doneness:

    • Rare: 125°F

    • Medium-rare: 130-135°F

    • Medium: 140-145°F

    • Well-done: 160°F

  • Remove the steak from the pan and let it rest on a plate, covered loosely with foil, for 5-10 minutes.

Step 3: Cook the Eggs

  • In a small frying pan, melt butter over medium heat.

  • Crack the eggs into the pan, keeping yolks intact for sunny-side-up eggs.

  • Cook for 2-3 minutes until whites are set but yolks are runny. For over-easy eggs, flip them and cook for another 30 seconds.

  • Season with salt and pepper.

Step 4: Slice and Serve

  • Slice the rested steak against the grain for tenderness.

  • Plate the steak alongside the eggs.

  • Garnish with fresh herbs if desired.

Step 5: Enjoy!

  • Serve immediately with toast, avocado, or roasted potatoes.
