Instructions
Step 1: Make the Cheesecake Filling
In a bowl, beat the softened cream cheese, powdered sugar, and vanilla extract until smooth and creamy. Scoop small 1-teaspoon dollops onto a parchment-lined baking sheet and freeze for at least 30 minutes. This helps the filling stay intact during baking.
Step 2: Prepare the Cookie Dough
In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy. Add the egg and vanilla extract, mixing until fully combined.
Step 3: Mix the Dry Ingredients
