Instructions
Step 1: Prepare the Chicken Breasts

Preheat your oven to 375°F (190°C).

Place the chicken breasts on a cutting board and pat them dry with paper towels.

Using a sharp knife, carefully cut a horizontal slit into the thickest part of each chicken breast to create a pocket for the filling. Be careful not to cut all the way through.
Step 2: Season the Chicken

In a small bowl, mix salt, black pepper, garlic powder, and paprika.

Rub the seasoning mixture evenly over both sides of the chicken breasts.
Step 3: Make the Spinach Filling

In a mixing bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, Italian seasoning, and red pepper flakes. Mix until well combined.
Step 4: Stuff the Chicken Breasts

Spoon the spinach filling into the pockets of each chicken breast. Use toothpicks or kitchen twine to secure the openings.
Step 5: Cook the Chicken

Heat olive oil in an oven-safe skillet over medium-high heat.
