  • 4 boneless, skinless chicken breasts

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon garlic powder

  • 1 teaspoon paprika

  • 2 tablespoons olive oil (for cooking)

For the Spinach Filling:

  • 2 cups fresh spinach (chopped)

  • 1 cup cream cheese (softened)

  • 1/2 cup shredded mozzarella cheese

  • 1/4 cup grated Parmesan cheese

  • 2 cloves garlic (minced)

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon red pepper flakes (optional for heat)

Optional Toppings:

  • 1/2 cup marinara sauce

  • 1/4 cup shredded mozzarella cheese


Instructions

Step 1: Prepare the Chicken Breasts

  • Preheat your oven to 375°F (190°C).

  • Place the chicken breasts on a cutting board and pat them dry with paper towels.

  • Using a sharp knife, carefully cut a horizontal slit into the thickest part of each chicken breast to create a pocket for the filling. Be careful not to cut all the way through.

Step 2: Season the Chicken

  • In a small bowl, mix salt, black pepper, garlic powder, and paprika.

  • Rub the seasoning mixture evenly over both sides of the chicken breasts.

Step 3: Make the Spinach Filling

  • In a mixing bowl, combine chopped spinach, cream cheese, mozzarella, Parmesan, minced garlic, Italian seasoning, and red pepper flakes. Mix until well combined.

Step 4: Stuff the Chicken Breasts

  • Spoon the spinach filling into the pockets of each chicken breast. Use toothpicks or kitchen twine to secure the openings.

Step 5: Cook the Chicken

  • Heat olive oil in an oven-safe skillet over medium-high heat.

  • Sear the chicken breasts for 2-3 minutes on each side until golden brown.

  • Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).

Optional Step:

  • During the last 5 minutes of baking, top the chicken with marinara sauce and extra mozzarella cheese for a cheesy finish.
