  • 2 tbsp olive oil
  • 3 tbsp brown sugar
  • 1 tbsp smoked paprika
  • 1 tbsp garlic powder
  • 1 tbsp onion powder
  • 1 tbsp chili powder
  • 1 tsp black pepper
  • 1 tsp kosher salt
  • 1 tsp cumin
  • ½ tsp cayenne pepper (optional for heat)

For the BBQ Sauce (Optional Homemade):

  • 1 cup ketchup
  • ½ cup apple cider vinegar
  • ¼ cup brown sugar
  • 2 tbsp molasses
  • 1 tbsp Worcestershire sauce
  • 1 tbsp mustard
  • 1 tsp smoked paprika
  • ½ tsp black pepper
  • ½ tsp salt

For the Sandwich Assembly:

  • 8 soft sandwich buns or brioche buns
  • 1 cup coleslaw (optional)
  • ½ cup sliced pickles
  • Optional toppings: sliced jalapeños, crispy onions, cheese

Instructions

Step 1: Prepare the Brisket Rub

In a small bowl, mix together brown sugar, smoked paprika, garlic powder, onion powder, chili powder, black pepper, kosher salt, cumin, and cayenne pepper. Rub olive oil all over the brisket, then apply the spice mix generously on all sides, pressing it in to ensure a good crust.

Step 2: Smoke or Cook the Brisket

  • Smoking method (preferred):
  • Preheat smoker to 225°F (107°C).
  • Place the brisket on the smoker grate, fat side up.
  • Smoke for 6–8 hours, spritzing with apple juice or water every hour after the first 2 hours.
  • Once internal temperature reaches about 165°F (74°C), wrap brisket in foil or butcher paper.
  • Continue smoking until internal temperature reaches 195–205°F (90–96°C).
  • Let it rest, wrapped, for at least 30–60 minutes before slicing.

Oven method (alternative):

  • Preheat oven to 300°F (149°C).
  • Place brisket in a roasting pan and cover tightly with foil.
  • Roast for 5–6 hours until tender.
  • Let it rest before slicing.

Slow cooker method (alternative):

  • Cut brisket to fit inside.
  • Add a splash of broth or sauce.
  • Cook on low for 8–10 hours.
  • Shred instead of slicing.

Step 3: Make the BBQ Sauce (Optional)

While the brisket is cooking, combine all BBQ sauce ingredients in a saucepan. Simmer over medium heat for 15–20 minutes until thickened. Adjust seasoning to taste.

Step 4: Slice or Shred the Brisket

Once rested, place brisket on a cutting board. Slice against the grain for tender pieces, or shred with forks if you prefer a pulled-brisket style.

Step 5: Assemble the Sandwiches

Toast buns if desired. Layer brisket on the bottom bun, drizzle with BBQ sauce, top with coleslaw, pickles, or your preferred toppings, and place the top bun.
