Instructions
🥄 Step 1: Prep the Aromatics
Peel and chop the ginger and onion. Peel the garlic. Rough chopping is fine since everything will be blended. Use fresh ginger for the best flavor—it’s the star of this recipe.
🥄 Step 2: Combine Ingredients in Blender
Add the chopped ginger, onion, garlic, soy sauce, rice vinegar, sesame oil, olive oil, honey, and lemon juice into a blender or food processor.
🥄 Step 3: Blend Until Smooth
Blend on high until all the ingredients are fully pureed and the dressing is creamy. Scrape down the sides if needed.
🥄 Step 4: Adjust Consistency and Seasoning
Add 1-2 tablespoons of water to reach your preferred consistency. Taste and adjust with more honey for sweetness, vinegar for tanginess, or salt and pepper for seasoning.

Transfer the dressing to a mason jar or airtight container. Let it chill in the fridge for 30 minutes to allow flavors to meld. Shake well before each use.
