Ingredients
Scale
For the Salmon:
- 4 salmon fillets (about 6 oz each)
- 1 tablespoon olive oil
- Salt and black pepper (to taste)
For the Honey Pineapple Glaze:
- 1/2 cup pineapple juice (fresh or bottled)
- 1/4 cup honey
- 2 tablespoons soy sauce (or tamari for gluten-free)
- 1 tablespoon rice vinegar
- 1 teaspoon minced garlic
- 1 teaspoon grated ginger
- 1/4 teaspoon red pepper flakes (optional, for a hint of spice)
For the Pineapple Topping:
- 1 cup fresh pineapple chunks (or canned pineapple, drained)
- 1 tablespoon chopped fresh cilantro (for garnish)
Instructions
- Preheat the Oven
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup. - Prepare the Glaze
In a small bowl, whisk together pineapple juice, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Set aside. - Season the Salmon
Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season lightly with salt and black pepper. - Add the Glaze
Brush half of the honey pineapple glaze over the salmon fillets, ensuring they are evenly coated. Reserve the remaining glaze for later. - Bake the Salmon
Bake the salmon in the preheated oven for 12-15 minutes, depending on the thickness of the fillets. Halfway through cooking, brush the salmon with the remaining glaze and add the pineapple chunks around the fillets. - Garnish and Serve
Once the salmon is cooked through (internal temperature of 145°F), remove it from the oven. Garnish with fresh cilantro and serve immediately.
