For the Honey Pineapple Glaze:

  • 1/4 cup honey
  • 2 tablespoons soy sauce (or tamari for gluten-free)
  • 1 tablespoon rice vinegar
  • 1 teaspoon minced garlic
  • 1 teaspoon grated ginger
  • 1/4 teaspoon red pepper flakes (optional, for a hint of spice)

For the Pineapple Topping:

  • 1 cup fresh pineapple chunks (or canned pineapple, drained)
  • 1 tablespoon chopped fresh cilantro (for garnish)

Instructions

  1. Preheat the Oven
    Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easy cleanup.
  2. Prepare the Glaze
    In a small bowl, whisk together pineapple juice, honey, soy sauce, rice vinegar, minced garlic, grated ginger, and red pepper flakes (if using). Set aside.
  3. Season the Salmon
    Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season lightly with salt and black pepper.
  4. Add the Glaze
    Brush half of the honey pineapple glaze over the salmon fillets, ensuring they are evenly coated. Reserve the remaining glaze for later.
  5. Bake the Salmon
    Bake the salmon in the preheated oven for 12-15 minutes, depending on the thickness of the fillets. Halfway through cooking, brush the salmon with the remaining glaze and add the pineapple chunks around the fillets.
  6. Garnish and Serve
    Once the salmon is cooked through (internal temperature of 145°F), remove it from the oven. Garnish with fresh cilantro and serve immediately.
